March 2007 - A friend introduced me to the unusual taste of this delicious rice pudding.

Cardamom Rice Pudding

 

Ingredients

˝ pint milk
200g/7oz easy-cook rice
4 cardamom pods, crushed
1 vanilla pod, split
100ml/3˝fl oz double cream
55g/2oz caster sugar

Method

1. Bring the milk to a simmer in a medium saucepan. Add the rice with the cardamom, vanilla pod, cream and sugar and simmer gently for 10-12 minutes, stirring occasionally until the rice is tender and creamy.
2. Remove from the heat and transfer to a serving dish to serve.
