April 2006 - Do you remember this from school dinners?

Manchester Tart

Serves 4

1 shortcrust pastry case, 7 inch, baked blind

3 tbsp Raspberry Jam (or any other favourite flavour)
2-3 tbsp Desiccated Coconut

2 medium eggs
300ml (1/2 pint) Milk
2 tbsp Sugar


Spread the jam over the pastry base, sprinkle with coconut.

Whisk eggs.  Bring milk and sugar to the boil.  Pour onto eggs and cool.

Pour into the pastry case.
Sprinkle with coconut and bake for about 20 minutes at 180C (350F, gas mark 4) until set.

Allow to cool before serving.
