June 2006 - I'm not an experienced cake baker, but this turned out beautifully.

Carrot Cake

·    6oz/175g Sunflower oil

·    1tsp Vanilla essence

·    6oz/175g Golden caster sugar

·    1 tsp Baking powder

·    6oz/175g Plain flour

·    1 tsp Bicarbonate of soda

·    8oz/225g Grated carrot

·    1 tsp Ground cinnamon

·    4oz/100g Walnut pieces

·    1 Pinch of salt

·    3 Large eggs

 

·    1 tsp Honey

·    4oz/100g Marscapone cheese

·    Few walnut halves (for decoration)       

     

Heat the oven to 350f, gas mark 4, 180°c (fan oven 160°c). Grease and line an 8? round cake tin.

Put all ingredients, except for the walnuts, marscapone and honey into a large bowl and beat until completely smooth.

Fold in the walnuts.

Pour into tin and bake for 1¼ hrs (10 mins less for fan ovens).

Turn out and cool completely.

To make topping, beat the honey and marscapone cheese together and spread over the cake, decorate with walnut halves and listen to the mmmm's when you share it around.
