June 2007 - A soup made from all of my home produce. Potato & Bean SoupRabbit stock 1. Put all the ingredients, except half of the mint leaves, into a large pot. 2. Cover and simmer for 30 minutes. Cool. 3. Blend the contents in a food processor together with the remaining handful of mint leaves. 4. Add more water if needed and season with salt and pepper.
