June 2008 - what to do with cabbage?  Try this quick, simple and delicious salmon dish.

Blackened salmon with creamy cabbage

Serves 2

For the salmon
1 tbsp honey
3-4 tbsp soy sauce
2 salmon fillets

For the cabbage
30g/1oz unsalted butter
½ savoy cabbage, shredded
110ml/4fl oz double cream or creme fraise
salt and freshly ground black pepper

Heat the honey and soy sauce in a small frying pan and add the salmon, cooking for 2-3 minutes on each side.

For the cabbage, gently melt the butter in a pan add the cabbage, sweat for 4-6 minutes, or until softened. Stir in the cream and simmer for a further few minutes. Season to taste.

To serve, spoon the cabbage onto a serving plate and serve the blackened fillet on top. Serve immediately.

 

I also serve this with savoury rice on top of the cabbage, topped by the salmon.
