July 2006 - nothing to cook but use as many home grown vegetables as possible!  I much prefer this to the traditional english lettuce/tomato/cucumber salad.

I shred the vegetables with my food processor, using the largest grater attachment.  You can vary the vegetable mix according to your taste.  I sometimes vary the mixture with chopped mushrooms or shredded cauliflower.

Chick's Vegetable Salad

1 courgette, shredded
4 carrots, shredded
1 small head of broccoli, shredded
2 celery sticks, shredded
8 radishes, shredded
1 red pepper, chopped
8 cherry tomatoes, quartered

20 pitted black olives, halved
freshly ground black pepper
salad dressing, of your preference

Mix all ingredients in a large salad bowl, pour over dressing, toss and serve.

Serves 4 

 

Try this dressing, which is also good on courgette & mushroom salad:

4 tablespoons sunflower oil
2 tablespoons walnut or hazelnut oil
3 tablespoons lemon juice
1/4 teaspoon pepper
1 teaspoon honey
1 clove garlic, crushed
1 tablespoon finely chopped spring onions or chives
2 tablespoons freshly chopped parsley

Simply whisk together all ingredients, pour over salad, toss and serve
