December 2005 - for those of you who want something a little lighter than traditional Xmas pud!

Iced Christmas Pudding

¼ pint milk
4oz marshmallows
1 teaspoon cocoa
1 teaspoon instant coffee
2oz raisins
1 oz currents
2 tablespoons sherry
2oz diced cherries
2 oz chopped nuts
½ pint thick cream – whipped

Put milk, marshmallows, coffee and cocoa in a pan, heat gently until marshmallows are melted.  Allow to cool.

Mix the dried fruit with the sherry, allow to stand for 30 minutes, then add to the marshmallow mixture with cherries and nuts.  

Freeze for a short time until slightly thickened, fold in the whipped cream, put into a basin and freeze.

Serve and enjoy.
